🥚Classic Devilled Eggs with a Spring Twist

Devilled eggs are an Easter staple, and for good reason. They're creamy, tangy, and endlessly customisable. This version adds a pop of colour and flavour with fresh herbs and a hint of Dijon mustard.

Ingredients:

  • 6 large eggs

  • 2 tbsp mayonnaise

  • 1 tsp Dijon mustard

  • 1 tsp white vinegar

  • Salt & pepper to taste

  • Paprika, chives, and dill for garnish

Instructions:

  1. Boil eggs for 10 minutes, then transfer to an ice bath.

  2. Peel and halve them, scooping yolks into a bowl.

  3. Mash yolks with mayo, mustard, vinegar, salt, and pepper.

  4. Spoon or pipe mixture into egg whites.

  5. Sprinkle with paprika and chopped herbs.

🍞Soft and Spiced Hot Cross Buns

These pillowy buns are gently spiced with cinnamon and studded with raisins, perfect for breakfast, tea, or a sweet afternoon treat.

Ingredients:

  • 500g plain flour

  • 50g caster sugar

  • 1 tbsp fast-action dried yeast

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground nutmeg

  • 240ml warm milk (whole or semi-skimmed)

  • 60g melted unsalted butter

  • 1 medium egg

  • 75g raisins or currants

For the cross:

  • 60g plain flour + enough water to form a thick paste

For the glaze:

  • 2 tbsp apricot jam
