  • 250g cherry tomatoes

  • Fresh basil
  • Salt and black pepper

Method

Preheat the oven to 200°C, 180°C fan or gas mark 6.

Place the tomatoes in a small roasting dish. Drizzle with olive oil, season with oregano, salt and black pepper, then roast for 20 minutes until soft and lightly caramelised.

Blend the feta with the cream cheese or yoghurt until smooth.

Toast the sourdough and rub each slice lightly with the cut side of the garlic clove. Spread with the whipped feta, top with the roasted tomatoes and finish with fresh basil.

  • 300g pasta
  • 300g chestnut mushrooms, sliced

Method

Cook the pasta according to the packet instructions, reserving a cup of the cooking water before draining.

Heat the olive oil and butter in a large frying pan. Add the mushrooms and cook until golden.

Stir in the garlic and cook for one minute. Add the cream, Parmesan and mustard, then season with salt and black pepper.

Add the drained pasta and toss until coated. Loosen the sauce with a little reserved pasta water if needed.

Finish with fresh parsley and extra Parmesan before serving.

3. Baked Salmon with Lemon and Herb Crumb

A crisp herb topping makes this easy baked salmon feel polished enough for entertaining while remaining simple enough for a weekday dinner.

Ingredients

  • 4 salmon fillets
  • 60g fresh breadcrumbs
  • Zest of 1 lemon
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped dill
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Salt and black pepper

Method

Preheat the oven to 200°C, 180°C fan or gas mark 6.

Place the salmon fillets on a lined baking tray and spread a thin layer of mustard over each one.

Mix the breadcrumbs, lemon zest, parsley, dill and olive oil in a bowl. Season with salt and black pepper.

Press the crumb mixture onto the salmon.

Bake for 12-15 minutes, depending on the thickness of the fillets, until the salmon is cooked and the topping is golden.

4. Harissa Chicken with Roasted Apricots and Herby Couscous

Sweet roasted apricots, warm harissa and fresh herbs give this easy chicken recipe a vibrant, dinner-party feel without making it difficult to prepare.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons harissa paste
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 6 fresh apricots, halved and stoned
  • 1 red onion, cut into wedges
  • 200g couscous
  • 250ml hot chicken stock
  • 1 small bunch of parsley, chopped
  • 1 small bunch of mint, chopped
  • Zest and juice of 1 lemon
  • 40g toasted almonds
  • Salt and black pepper

Method

Preheat the oven to 200°C, 180°C fan or gas mark 6.

Mix the harissa, olive oil and honey in a small bowl. Rub the mixture over the chicken thighs and season with salt and black pepper.

Place the chicken, apricots and red onion in a roasting tray. Roast for 35-40 minutes, or until the chicken is golden and thoroughly cooked.

Meanwhile, place the couscous in a heatproof bowl and pour over the hot stock. Cover and leave for five minutes, then fluff with a fork.

Stir through the parsley, mint, lemon zest, lemon juice and toasted almonds.

Serve the harissa chicken over the herby couscous, spooning the roasted apricots and tray juices over the top.

5. Warm Chocolate and Berry Pots

These individual chocolate desserts are rich, simple and easy to prepare ahead of time.

Ingredients

  • 100g dark chocolate
  • 100g butter
  • 2 eggs
  • 60g caster sugar
  • 30g plain flour
  • 100g raspberries or mixed berries
  • Icing sugar, for serving

Method

Preheat the oven to 190°C, 170°C fan or gas mark 5.

Grease four small ramekins.

Melt the chocolate and butter together, then leave to cool slightly.

Whisk the eggs and sugar until combined. Fold in the melted chocolate mixture, followed by the flour.

Divide the berries between the ramekins and spoon the chocolate mixture over the top.

Bake for 12-14 minutes until the edges are set but the centres remain soft.

Dust with icing sugar and serve warm with cream or ice cream.
