Method

  1. Add the beef, carrots, potatoes, onion and celery to the slow cooker.
  2. Stir in the tomato purée.
  3. Pour over the beef stock and Worcestershire sauce.
  4. Add the thyme and bay leaf.
  5. Season with salt and pepper.
  6. Cook on low for 7-8 hours or high for 4-5 hours.
  7. Remove the bay leaf before serving.

Make-Ahead Tip

Beef stew is ideal for batch cooking because the flavour develops even more overnight. Store in the fridge for up to three days or freeze portions for later.

Pumpkin Pasta Bake

Ingredients

  • 300g pasta
  • 300g pumpkin purée
  • 150ml double cream
  • 100ml vegetable stock
  • 2 garlic cloves, crushed
  • 100g grated cheddar
  • 50g parmesan
  • 1 tsp dried sage
  • 100g baby spinach
  • Salt and black pepper

Method

  1. Cook the pasta until just al dente.
  2. Meanwhile, add the pumpkin purée, cream, stock, garlic and sage to a saucepan.
  3. Simmer gently for 5 minutes.
  4. Stir in the spinach until wilted.
  5. Add the cooked pasta and half of the cheese.
  6. Transfer to a baking dish.
  7. Sprinkle the remaining cheese over the top.
  8. Bake at 190°C for 20-25 minutes until bubbling and golden.

Make-Ahead Tip

Assemble the pasta bake the day before, cover and refrigerate. Bake when ready to eat, adding a few extra minutes to the cooking time if baking straight from the fridge.

Autumn Vegetable Lasagne

Ingredients

  • 9 lasagne sheets
  • 500g butternut squash, diced
  • 250g mushrooms, sliced
  • 150g spinach
  • 500g tomato pasta sauce
  • 500ml béchamel sauce
  • 150g grated mozzarella
  • 50g parmesan
  • 1 tbsp olive oil
  • 1 tsp dried thyme

Method

  1. Preheat the oven to 200°C.
  2. Toss the butternut squash with olive oil and thyme.
  3. Roast for 25 minutes.
  4. Fry the mushrooms until golden.
  5. Stir in the spinach and cook until wilted.
  6. Spoon a layer of tomato sauce into a baking dish.
  7. Add lasagne sheets, vegetables and béchamel.
  8. Repeat the layers.
  9. Finish with béchamel, mozzarella and parmesan.
  10. Bake for 35-40 minutes until golden.

Make-Ahead Tip

Assemble the lasagne ahead of time and refrigerate overnight. You can also freeze it before baking.

Apple and Cinnamon Overnight Oats

Ingredients

  • 50g rolled oats
  • 100ml milk
  • 100g Greek yoghurt
  • 1 small apple, grated
  • ½ tsp cinnamon
  • 1 tsp honey or maple syrup
  • 1 tbsp chia seeds

Method

  1. Add all the ingredients to a jar or container.
  2. Stir well.
  3. Cover and refrigerate overnight.
  4. Stir again before serving.
  5. Top with extra apple, nuts or granola if desired.

Roasted Autumn Vegetable Traybake

Ingredients

  • 1 small butternut squash, chopped
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1 sweet potato, chopped
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper

Method

  1. Preheat the oven to 200°C.
  2. Add all the vegetables to a large baking tray.
  3. Drizzle with olive oil.
  4. Sprinkle over the rosemary and thyme.
  5. Season with salt and pepper.
  6. Roast for 35-40 minutes, turning halfway through.

Easy Chilli Con Carne

Ingredients

  • 500g beef mince
  • 1 onion, chopped
  • 1 red pepper, diced
  • 2 garlic cloves, crushed
  • 400g chopped tomatoes
  • 400g kidney beans, drained
  • 2 tbsp tomato purée
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 200ml beef stock

Method

  1. Brown the mince in a large saucepan.
  2. Add the onion and pepper and cook for 5-8 minutes.
  3. Stir in the garlic and spices.
  4. Add the tomato purée.
  5. Pour in the chopped tomatoes and stock.
  6. Simmer for 25 minutes.
  7. Stir in the kidney beans.
  8. Cook for another 10 minutes.

Make-Ahead Tip

Chilli is perfect for batch cooking. Freeze individual portions and serve with rice, baked potatoes or wraps.

Tips for Making Autumn Recipes Ahead
