Method

  1. Combine the lemon zest, lemon juice, olive oil, garlic, paprika, oregano, salt and pepper in a bowl.
  2. Add the chicken and mix until evenly coated.
  3. Cover and marinate in the fridge for at least 30 minutes.
  4. Thread the chicken onto skewers.
  5. Cook on a barbecue, under a grill or on a hot griddle pan for 10 to 14 minutes, turning regularly, until cooked through.
  6. To make the sauce, place all the sauce ingredients in a blender.
  7. Blend until smooth and bright green.
